Perfect for the 4th of July! Or anytime!!


Firecracker cakelettes

1 box white cake mix
4 egg whites
1/2 cup oil
1/2 cup water
1 cup sour cream

*Red and blue food coloring
3 packages Pop Rocks candy
Black licorice ropes
White frosting (less than 1/4 cup). *Mix white cake mix, egg whites, oil, water and sour cream for three to four minutes on medium speed. Split cake batter into three equal amounts, adding red and blue food coloring to two of the portions. Coat three, 4 x 9-inch bread pans with cooking spray and lightly flour the bottoms. Add the three batters to the pans and bake at 350 degrees F for 18-23 minutes. Allow them to cool and remove from pans.
*Using a 1-1/2-inch round cookie cutter, cut circles from each of the baked cakes. (I got 10 out of each cake, but you might be able to get more if you try.)
*Using a serrated knife, carefully trim off the browned, baked bottoms of each cake circle.
*Using a jumbo straw or plastic tube (one-half or three-quarters-inch in diameter), remove the centers of the cake circles. Be sure to save the red and blue centers to use as plugs for later.
*Put a portion of the red cake plugs back into the bottoms of the red cake circles. Pipe a line of frosting around the centers of the red and white cake circles. Stack the white cakes on top of the red cakes and the blue cakes on top of the white cakes.
*Add Pop Rocks down the hollow centers of the stacked cakes. Put a portion of the blue cake plugs back into the tops, covering the center filled with Pop Rocks.
*Cut licorice rope pieces approximately 1-1/2 inches long and insert them into the centers of the blue cakes.

Talk about a killer center piece at your summer BBQ's
You gotta share this one with everybody.

Watermelon Shark Recipe 
TOTAL TIME: Prep: 1 hour MAKES: 32 servings

Ingredients
1 large watermelon
2 cups seedless red grapes
1 medium cantaloupe, peeled, seeded and cubed
2 cups fresh blueberries
2 medium oranges
1 jar (12 ounces) pineapple preserves
Swedish Fish candies, optional

Directions
1.Using a large sharp knife, cut off one end of the watermelon so that watermelon stands at an angle. Using a razor blade or small knife, score an opening for the mouth. With knife, cut out and remove mouth. Cut out triangles for teeth; remove rind from teeth.
2.For shark fin, cut a triangle from removed rind; attach to shark with toothpicks. For eyes, attach two grapes with toothpicks.
3.Remove fruit from inside watermelon; cut into cubes. In a large bowl, combine watermelon, cantaloupe, blueberries and remaining grapes. Finely grate peel from oranges and squeeze juice. In a small bowl, mix preserves, orange juice and peel; add to fruit and toss gently.
4.Stand shark on a platter. Fill opening with some of the fruit mixture; add a few Swedish Fish if desired. Serve with remaining fruit. Yield: 32 servings.

Flag Cake


Barefoot Contessa's Flag Cake
Perfect for July 4th Celebrations!

Ingredients
18 tablespoons unsalted butter, at room temperature
3 cups sugar
6 extra-large eggs, at room temperature
1 cup sour cream, at room temperature
1 1⁄2 teaspoons pure vanilla extract
3 cups flour
1⁄3 cup cornstarch
1 teaspoon kosher salt
1 teaspoon baking soda

For the icing
1 lb unsalted butter, at room temperature
1 1⁄2 lbs cream cheese, at room temperature
1 lb confectioners' sugar, sifted
1 1⁄2 teaspoons pure vanilla extract

To assemble
1 pint blueberries
1 1⁄2 pints raspberries

Directions
Heat the oven to 350 degrees F.
Butter and flour an 18 by 13 by 1 1/2-inch sheet pan.
Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment on high speed, until light and fluffy.
On medium speed, add the eggs, 2 at a time, then add the sour cream and vanilla.
Scrape down the sides and stir until smooth.
Sift together the flour, cornstarch, salt, and baking soda in a bowl.
With the mixer on low speed, add the flour mixture to the butter mixture until just combined.
Pour into the prepared pan.
Smooth the top with a spatula.
Bake in the center of the oven for 20 to 30 minutes, until a toothpick comes out clean.
Cool to room temperature.
For the icing, combine the butter, cream cheese, sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment, mixing just until smooth.
Spread three-fourths of the icing on the top of the cooled sheet cake.
Outline the flag on the top of the cake with a toothpick.
Fill the upper left corner with blueberries. Place 2 rows of raspberries across the top of the cake like a red stripe.
Put the remaining icing in a pastry bag fitted with a star tip and pipe two rows of white stripes below the raspberries. Alternate rows of raspberries and icing until the flag is completed.
Pipe stars on top of the blueberries. Serve this cake right in the pan.
If you want to turn it out onto a board before frosting, use parchment paper when you grease and flour the pan.

Very Interesting Information....hope you take time to read this one!
Ziploc Baggies...........who knew?
We went with friends to a restaurant on Sunday for lunch and sat in the patio section beside the store. We happened to notice ziploc baggies pinned to a post and a wall. The bags were half filled with ...water, each contained 4 pennies, and they were zipped shut. Naturally we were curious! The owner told us that these baggies kept the flies away! So naturally we were even more curious! We actually watched some flies come in the open window, stand around on the window sill, and then fly out again. And there were no flies in the eating area! This morning I checked this out on Google.
Below are comments on this fly control idea. I'm now a believer!
Ziploc water bags: #1 Says: I tried the ziploc bag and pennies this weekend. I have a horse trailer. The flies were bad while I was camping. I put the baggies with pennies above the door of the LQ. NOT ONE FLY came in the trailer.The horse trailer part had many. Not sure why it works but it does!
#2 Says:Fill a ziploc bag with water and 5 or 6 pennies and hang it in the problem area. In my case it was a particular window in my home. It had a slight passage way for insects. Every since I have done that, it has kept flies and wasps away. Some say that wasps and flies mistake the bag for some other insect nest and are threatened.
#3 Says:I swear by the plastic bag of water trick. I have them on porch and basement. We saw these in Northeast Mo. at an Amish grocery store& have used them since. They say it works because a fly sees a reflection& won't come around.
#4 Says:Regarding the science behind ziploc bags of water? My research found that the millions of molecules of water presents its own prism effect and given that flies have a lot of eyes, to them it's like a zillion disco balls reflecting light, colors and movement in a dizzying manner. When you figure that flies are prey for many other bugs, animals, birds, etc., they simply won't take the risk of being around that much perceived action. I moved to a rural area and thought these "hillbillies" were just yanking my city boy chain but I tried it and it worked immediately! We went from hundreds of flies to seeing the occasional one, but he didn't hang around long.

THIS LQQKS AWESOME!!

WOW!! NOT JUST TASTY BUT THIS LQQKS AWESOME!!

Cherry Cheese Coffee Cake & Filling

2 (8 oz. each) pkgs. refrigerated crescent rolls
8 oz. cream cheese
1/4 cup powdered sugar
1 egg
1/2 tsp. vanilla or almond extract
21 oz. can cherry pie filling

Glaze
1/2 cup powdered sugar
2-3 teaspoons milk

Preheat oven to 350 degrees F.
Unroll crescent dough and arrange 12 of the triangles in a circle with wide ends toward the outside edge of the Large Round Stone - the points will not meet in the center.
Lightly flour and roll out the seams making a 14" circle with a 3" hole in the center.
Combine the cream cheese, powdered sugar, egg & vanilla and spread over dough.
Top with pie filling.
Cut each of the 4 remaining triangles into thirds (starting at the wide end opposite the point and cutting lengthwise to the point). Arrange over filling evenly in spoke-like pattern.
Press ends to seal at center and outer edges.
Bake 25-30 minutes or until golden brown.
Cool slightly.
Mix powdered sugar and milk until glaze consistency and drizzle over coffee cake.

Peach Cake...


Peach Cake...

✿´¯`*•.¸¸✿SHARE TO SAVE TO YOUR TIMELINE✿´¯`*•.¸¸✿

Ingredients:
1 large can sliced peaches, drained and mashed (I used 2 regular cans since that is all I had at the time) You could also use fresh peaches.
2 cups all-purpose flour
2 cups sugar
2 teaspoons baking soda

Drain the peaches and empty into a large bowl. I just used my hands to mash them. Add flour, sugar and soda and mix well. Spray a 9 x 13 inch cake pan and pour in batter. Bake in a preheated 350F degree oven for 35 minutes. See recipe below for icing.

ICING:
3/4 cup sugar
3/4 regular sized can of evaporated milk
1 stick butter or margarine
1 cup coconut (I used a little more than a cup of coconut)
1 cup nuts
Boil everything but the nuts on top of the stove until thickens, remove from heat, stir in nuts and spread on cooled cake.

Perfect for low carb

Perfect for low carb, pair this with a salad and your have a great low carb meal!

Ingredients

1 lb boneless, skinless chicken breasts
4 oz pepper jack cheese, shredded (you can use up to 6 oz)
1 c frozen spinach, thawed and drained (you can also use fresh cooked spinach)
2 tbsp olive oil
Cajun seasoning ( can skip if you wish )
1 tbsp breadcrumbs (I use Italian style)
Sea salt, to taste
Freshly ground black pepper, to taste
Lots of toothpicks

Directions

Preheat oven to 180 (350 degreesf ).

Flatten the chicken to 1/4-inch thickness.

In a medium bowl, combine the pepper jack cheese, spinach, salt and pepper.

Combine the Cajun seasoning and breadcrumbs together in a small bowl.

Spoon about 1/4 c of the spinach mixture onto each chicken breast. Roll each chicken breast tightly and fasten the seams with several toothpicks. This part requires a tiny bit of skill and I typically use about 8 toothpicks in each roll to ensure none of the filling seeps out. Be sure to count how many total toothpicks were used!

Brush each chicken breast with the olive oil. Sprinkle the Cajun seasoning mixture evenly over all. Sprinkle any remaining spinach and cheese on top of chicken (optional).

Place the chicken seam-side up onto a tin foil-lined baking sheet (for easy cleanup). Bake for 35 to 40 minutes, or until chicken is cooked through.

Remove the toothpicks before serving. Count to make sure you have removed every last toothpick. Serve whole or slice into medallions

CHICKEN QUESADILLAS


CHICKEN QUESADILLAS

Ingredients
1 pound skinless, boneless chicken breast, diced
1 (1.27 ounce) packet fajita seasoning
1 tablespoon vegetable oil
2 green bell peppers, chopped
2 red bell peppers, chopped
1 onion, chopped
10 (10 inch) flour tortillas
1 (8 ounce) package shredded Cheddar cheese
1 tablespoon bacon bits
1 (8 ounce) package shredded Monterey Jack cheese

Directions
Preheat the broiler. Grease a baking sheet.
Toss the chicken with the fajita seasoning, then spread onto the baking sheet. Place under the broiler and cook until the chicken pieces are no longer pink in the center, about 5 minutes.
Preheat oven to 350 degrees F (175 degrees C).
Heat the oil in a large saucepan over medium heat. Stir in the green bell peppers, red bell peppers, onion, and chicken. Cook and stir until the vegetables have softened, about 10 minutes.
Layer half of each tortilla with the chicken and vegetable mixture, then sprinkle with the Cheddar cheese, bacon bits, and Monterey Jack. Fold the tortillas in half and Place onto a baking sheet.
Bake quesadillas in the preheated oven until the cheeses have melted, about 10 minutes.

Use Saran's Press and Seal wrap on your refrigerator shelves to keep them clean. When they get dirty just peel off and throw in the trash. I love this:)

PINEAPPLE UPSIDE DOWN CUPCAKES!


PINEAPPLE UPSIDE DOWN CUPCAKES! 

Ingredients
1 box Pillsbury Moist Supreme Classic Yellow Cake Mix with pudding in the mix
1 (3.4 ounce) Vanilla Instant Pudding
3 eggs
1/3 cup oil
2/3 cup pineapple juice
1/3 cup milk
1 (8 ounce) can pineapple slices, drained (save juice)
1 (8 ounce) can crushed pineapple, drained (save juice)

Topping
1 stick butter, melted
1 cup brown sugar
maraschino cherries

Spray muffin tins well with cooking spray. Melt butter and sugar together on top of the stove. Add 1 tablespoon sugar mixture to each muffin cup. Next, put in 1 tablespoon crushed, drained pineapple or 1 pineapple slice in bottom of each cup. In a large bowl mix cake mix, pudding mix, eggs, oil, juice and milk with mixer. Fill cups 1/2 to 3/4 full with cake mix. Bake in preheated 350 degree oven for 25 minutes. Remove and let cool at least 10 minutes. Run a knife around the edges to loosen muffins from cups before removing. Turn cupcakes upside down on a platter and add cherries. Note: I used one regular 12 cup muffin tin and one large 6 cup tin to make these. This way the recipe made 18 cupcakes.. If just using regular 12 cup tins, it should make about 24 cupcakes. You could use all crushed pineapple or all pineapple rings as well. I wanted to try them both ways to see how they turned out. I think the pineapple rings work better in the larger cup muffin tins.) These would be good topped with whipped cream and you could add nuts to the mix.

Infused Water

A LOT of you tell me that you don't like to drink water even though you know you need to drink more so here is a delicious way to help you get through the "half you body weight in oz of water a day" that I keep preaching to you lol. One tip...peel the lemon (or any citrus fruit ) before adding, to avoid a bitter taste.

Really it only takes 10min to make this flavored water be careful though if you love strawberries like I do they may not make it into the water! It's so easy, don't overthink it! Just slice up the strawberries & lemons add a few mint leaves, ice & water & baaaaaaam! Strawberry, Lemon, Mint flavored water! Support your local farmers and pick up the ingredients at... the farmer's market when you can! Great for a party or just because it's beautiful & delicious! Drink your water!!!!

White Wine Pasta with Chicken & Shrimp! 

Ingredients:
2 chicken breasts, cut into cubes
1/2 medium onion, chopped
2 garlic cloves, minced
1/2 cup of chopped red bell pepper
1 tablespoon of dried Italian seasoning
1 teaspoon of Kosher salt
1 teaspoon of ground Black pepper
1/2 pound of cooked pasta
3 tablespoons of chicken stock
3 tablespoons of white wine
2 tablespoons of olive oil
1 tablespoon of butter
1/2 pound of shrimp, peeled and cleaned
a handful of grape tomatoes and fresh green beans

Directions:
1. Saute chicken in olive oil with salt, pepper, Italian seasoning along with the onion, garlic and bell pepper. Cook until the chicken has cooked through.
2. Add white wine and chicken stock and let the liquid reduce by about half. Toss in grape tomatoes, green beans, and shrimp at this point.
3. Once the shrimp have cooked through, add in butter to make the sauce extra rich and toss in the pasta. Be sure to coat the pasta with the sauce and serve immediately.

Baked Ham and cheese sliders

You will need: 
2 packages of King Hawaiian butter rolls cut in 1/2
1 pound Virginia brand ham shaved
sliced cheese of your choice (i used a bunch of different ones i used smoked gouda, Monterrey jack, pepperjack and cheddar) cut to fit rolls
1 stick real butter
1Tbs poppy seeds or as desired
2 Tbs brown sugar
1 bottle of sweet baby rays honey mustard
1 bottle sweet baby rays secret sauce (optional)

preheat oven to 375
slice rolls in 1/2 add ham, desired cheese and a tsp of either honey mustard or secret sauce to roll.
Put stick of butter, brown sugar and poppyseeds in pan and heat until butter is melted and mixed well. Add ham rolls to pan then use a spoon to pour sauce over the rolls making sure to let it run down the sides.
Bake at 375 for 10 minutes remove and enjoy

This patriotic cake is so simple and so versatile! To make this cake easy to take, you can frost and decorate it right in the pan.

Ingredients
1 box yellow cake mix
Water, vegetable oil and eggs called for on cake mix box
1 container creamy vanilla frosting or whipped vanilla frosting
1/3 cup fresh blueberries
1 pint (2 cups) fresh strawberries, stems removed, strawberries cut in half

Directions:
1 Heat oven to 350°F (325°F for dark or nonstick pan). Make and bake cake mix as directed on box for 13x9-inch pan. Cool 10 minutes. Run knife around sides of pan to loosen cake; remove from pan to cooling rack. Cool completely, about 1 hour.
2 Place cake on tray. Frost top and sides of cake with frosting.
3 For flag design, arrange blueberries on upper left corner of frosted cake to create stars; arrange strawberries in rows over frosted cake to create stripes. Serve immediately. Store covered in refrigerator. (Courtesy of Pillsbury.com)

Where do I start?

This week the question "Where do I start?" has been thrown at me a few times.
"You are so fit, how do you do it?" Well, you know the saying - where there is a will, there is a way!

So if you have been asking yourself (or others) this question, well done - you have find yourself some lingering will power. Now it's time to put it in action.

When starting a new healthy lifestyle, it is very important to:

Know why you are doing this, and:
Understand that everybody is different.
Firstly, why do you want to change your lifestyle? To look good? To feel fitter & healthier? To overcome existing health conditions? Or to live a long, healthful life?

No matter what your reason is, make sure it is a long-term goal. It is a new lifestyle, not just a temporary fix!

Once you have found your personal long-term motive, create a vision board or write it down. Make sure that these items are in plain sight (and preferably close to your bed) - they will serve you as a reminder of what you are trying to achieve.

Why take this approach? Visualization is a powerful mental tool which can help you stay on track. It is a commonly used technique in the health & fitness industry, from professional athletes to mental health practitioners.

Once your vision is set in stone (or paper:) ), it is time to seek information and educate yourself. The internet is full of advice, from highly technical research to instagram wisdom - whatever you seek you shall find.

But this is also the cause of much confusion. And that is why you need to remember that everyone is unique. What has worked for one person, may not work for the other.

We are different in so many ways - our genes, our upbringing, our current lifestyles & resources, our likes & dislikes...
